Rycraft cookie stamps have become a much-loved institution in countless kitchens around the world. These adorable handcrafted ceramic stamps follow the Scandinavian and Pennsylvania Dutch tradition of decorating cookies and cakes with designs from carved stamps.
Mrs. Rycraft's Almond Butter Cookies
1 cup butter
1/2 cup sugar
1 tsp almond extract
1/4 tsp salt
2 cups flour
Cream butter and sugar. Add extract. Add salt and flour and mix well. Chill dough. Form 1" balls. Stamp immediately with warm cookie stamp. Bake at 325 F for 12 to 15 minutes.
Variatioin: For Traditional Shortbread Cookies omit almond extract and salt.
BASIC COOKIE STAMP TIPS
1. Each time you use your cookie stamps, season them first by brushing with cooking oil. A toothbrush is ideal for this. NOTE: NEVER SEASON YOUR STAMPS WITH BUTTER!
2. As you stamp your cookies, use the toothbrush to keep the cookie stamp clean y crushing off any dough that sticks to its surface.
3. Important! Keep your stamps warm while you are using them. This helps keep the dough from stickin gto the stamp.
4. When finished, clean the face of your stmaps with hot water and a toothbrush. Let dry and store in one of our attractive cookie stamp home displays if available.
5. Experiment with your own butter cookie recipes. Avoid ones that contain baking powder, baking soda or eggs, as the design becomes less distinct if the cookie rises.
6. Adjustments in baking time and temperature:
…if cookie is too dark on bottom yet not lightly browned on top, lower your oven temperature and increase the baking time.
…thin cookies bake quicker than thick cookies; adjust baking temperature ant time accordingly.
… when using more than one cookie sheet, rotate the sheets on the oven racks half way through the baking cycle.
